Princess Castle Cake

My eldest daughter turned 5 recently and for her birthday she asked for a Princess Castle Cake.

I made two batches of my favourite vanilla cake recipe from ThermoBliss in a rectangular tin and then two batches in a small round tin.

While the cakes cooled I made a batch of Wilton’s Buttercream and split the batch into three bowls to mix in my gel colours. I covered the cakes with a crumb layer of icing and then got to work with my ice cream cone turrets.

I only needed to melt a small amount of chocolate to cover the waffle cones so I thought I would use the microwave. Even though I microwaved for small amounts of time I ended up burning the chocolate. What a waste of chocolate and time!

So I turned to my trusty Thermomix and used it to temper the chocolate by first grating it and then melting at 50 degrees. The chocolate melted perfectly so I could use my pastry brush to cover the waffle cones and then dip then in the sprinkles.

My reason for starting my Thermomix business is very different to the reason I am still a consultant today (6 years later). I have written blog posts about becoming a consultant, the training and the perks and even some tips about being a consultant whilst working full time or being on maternity leave. I am now a mother to two gorgeous girls (aged 5 and almost 3), still working part time in my local government job and now I am also studying kinesiology. So simply put I am a busy woman!

You may be wondering how I fit Thermomix around all that I do. To be totally honest with you I simply make it fit where I want it to. My family comes first so if we have busy plans then I block that time out for my family. I am always available to my customers if they have any questions or want to have a quick chat. But in terms of building my business I keep my availability on my terms. And with the new flexibility to work virtually it is a lot easier to ensure I maintain the work life balance that I want. I can work from home while my girls are busy playing with their toys or watching a movie. Sure they pop up in my zoom calls to say hi to my customers but once the novelty wears off they go back to doing what they were doing. I plan to start doing some Facebook lives but I’m not sure I’m ready for the random interruptions yet. I imagine it will be like when I am on an important phone call and the girls decide that is the time to have fight. Yet that is one of the realities of family life so I should just embrace it already!

We all have our own commitments and lifestyles. The best thing about having a Thermomix business now is that you truly have the flexibility to build it your way and you are empowered to work smarter, not harder.

School lunches

It’s back to school time or in my case it’s starting school time. My eldest is starting kindy this year so this is our first year of school lunches. So in the lead up to starting school next week we have been making some practice lunches so I can see what she will eat (she goes through a lot of fussy phases).

For inspiration and recipe ideas I explored the Back to School feature in Cookidoo and also checked out all of these blogs and their school lunch posts: Thermobliss, FatMumSlim, BakePlaySmile, TRTLMT, ThermoKitchen, CreateBakeMake.

These ABCD (apple, banana, coconut, date) muffins have been a huge hit! They make a great school snack… and work snack too!

My daughter is obsessed with ham and cheese at the moment so I will make ham and cheese sandwiches, ham and cheese scrolls, ham and cheese pizzas and these yum ham and cheese quinoa muffins.

I definitely want to add some more colours to her yumbox. But with this all being new for her I want to give her what I know she will eat and then add more variety as time goes by. I’m sure seeing her friends eating all different types of foods with help her want to try more things. And I’m definitely making sure I don’t compare our lunchbox to other mums. Especially the picture perfect ones with all the fancy work. We do have some sandwich cutters and cookie cutters and some cute little picks from Daiso which I know will make her lunch more fun!

And fun lunches that are quick and easy is all that is on the menu. And using my Thermomix to make as many freezable items as I can will definitely help with keeping things simple 🙂

Cookidoo

The new TM6 launched in Australia back in July. Around the same time the Thermomix recipe platform Cookidoo also had a re-launch. Changes were made to allow better functionality on the TM6 (there’s a bigger screen on the TM6 for you to access Cookidoo straight from your machine) and also on the app. 

Don’t know what Cookidoo is? It is our online library of more than 50,000 triple tested guided recipes from 15 countries. The Australian collection has over 2,300 and new recipes are added all the time. Some of these are digital collections with around 8-12 recipes like the new Skinnymixers Classics collection and some are cookbooks with over 100 recipes like the Plant to Plate cookbook. 

With Cookidoo you can browse recipes for inspiration and even meal plan and create shopping lists. You can also save recipes in your own folders called Collections. You can try it for free here. You also get a free six month subscription with your TM6 purchase and it’s just $49 to renew annually. 

The Cookidoo home screen is always updated with the latest recipes showing first so you can easily see what’s new. Or you can go straight to searching recipes using the search bar. You can search for more than just ‘chicken’ or ‘pad Thai’ with the search bar. You can search for ingredients you already have in your pantry or fridge by typing the ingredient/s eg zucchini, carrot. You can also search for allergen friendly recipes using tags eg #glutenfree

Once you have your results you can filter them by category eg Main dishes, serving size, total time. You can also increase your results by scrolling down to the Countries filter and adding more countries. If you know more than one language you can select non-English speaking countries or you can use Google translate to help with translating. You can then sort your results by the newest recipes, name or shortest time.

If you are looking for inspiration you can also browse Cookbook Collections instead of searching recipes. Just click on the magnify glass in the search bar and then click on the drop down arrow to select Collections. Then you can browse away or reduce/expand results using the same filters mentioned above.

My favourite part of Cookidoo is getting organised with the meal plan, collections and shopping list. You can add recipes to your weekly planner or even create your own collections (folders). You can create as many collections as you like and name them what you want. You can then access your recipes in your week and in your collections on your TM5/TM6 and use guided cooking.

You can add recipes directly to your shopping list or access it from the week planner. The shopping list will compile all the same ingredients together to tell you how much you need eg how many eggs. Simply tick off the items you don’t need and if you need to add other items you just need to scroll to the bottom and type them there. You can also change the view from category to recipe and remove a recipe here if you need to. Once you have gone through all your items you can then share your shopping list by copy and pasting it into a note or an email (to send to your partner to buy on their way home!)

First Fiesta

We celebrated my baby girl turning one with her First Fiesta! I had so much with this Mexican themed birthday party – the decorations and of course the food!

We love Mexican food so it was lots of fun making so many recipes from Cookidoo. We had a nacho table and a taco bar. For the nachos I made the Nachos with Black Beans and Guacamole.

This recipe is from the US Cookidoo collection and one thing I would change is to chop the garlic in the first step because for some crazy reason the recipe asks for minced garlic. I also chopped the black beans on speed 4 for about 10 seconds once they were cooked to make a bit more of a chunky paste. This recipe is really yum and so easy to make so if you are making them for a party I would suggest making them last. I left them in the oven too long and then had them out on the table too early. But they were still delicious!

The nacho table also had Steamed Corn with Chipotle Mayo and Coriander Salsa. If you haven’t steamed corn in the Varoma yet you need to get onto it. Even just plain corn cobs are a huge hit with the kids!

The taco table was the crowd pleaser. We had hard and soft tacos for guests to choose from and a choice of chicken or beef for their filling. I made Tinga de Pollo (shredded chicken). This is a super easy recipe to make but I did find it a bit watery and would try less tomato next time. I also made the Beef Taco mince which is a TM6 exclusive recipe as it uses the high heat function. I made two batches of this – one spicy and the other not spicy.

To go with the tacos I made Salsa Verde, Pico de Gallo and Guacamole (which I almost forgot to take out of the fridge!). I had also planned to make the Layered Mexican Dip but in the end decided we had enough so I just made the Salsa.

I really enjoyed making all these Mexican inspired recipes. I usually focus more on baking sweet treats for our events so this was a nice change. My mum and sister helped with the dessert table.

But of course I had to bake my daughter’s first birthday cake! This was a lot of fun to make. My new go-to cake recipe is the Brown Sugar Kumara Cake with Wilton’s Buttercream Icing from the Recipe Community. I am much better with fondant than I am with piping icing but I am happy with the end result. It did take a few goes until I found my rhythm and a straight-is line but the lucky thing with this style is it is very forgiving. And hey, it’s a fiesta! Just have fun!

Mermaid party food

My daughter recently turned three and for her birthday party she really wanted a mermaid theme so of course I had to include some mermaid themed party food.

For the grazing table I already had the Herb and Garlic dip, Tapenade and Mini Vegetable Frittatas. So to add some mermaid flavour I made the Macadamia and Parmesan Biscuits and used a mermaid tail cookie cutter.

But the dessert table is where we had all the mermaid fun. To go with the Coconut Ice and Mermaid Tail fairy bread I made these Pinwheel Biscuits.

For the cake I made two batches of the Brown Sugar Kumara Cake in 6 inch cake tins. I love this cake, it tastes like caramel mud cake and is a great solid cake to stack. I made a basic buttercream for the crumb icing and to layer the cake but for the buttercream petals/mermaid scales I used this recipe for Wilton’s Buttercream. It is amazing to work with and always hold its shape! This recipe makes a big batch so I had enough to decorate the mermaid cake, decorate my Basic Vanilla Cupcakes and also just enough to use to make my Clam shells

The cake was a huge hit and was so easy to make. I just watched a YouTube video on petal icing and I was good to go. My tip for icing cupcakes is to get yourself the Thermomix piping big and use the biggest star nozzle. This makes it so easy to pipe the perfect icing on your cupcakes!
