Curried almonds

 
I was flicking through the Cooking for Me and You cookbook looking for a particular recipe when I came across the recipe for Curried Almonds.

I had been planning to make some homemade gifts to give to friends for Christmas and thought these would be perfect!

The first step is making the curry powder. All you need is black peppercorns, coriander seeds, cumin seeds, turmeric powder, ground ginger, garlic granules, rock salt and cardamom seeds. After dry roasting them for 8 minutes you mill it into your curry powder and then pour into an airtight container.

With a clean and dry mixing bowl you add an egg white and whip it with the butterfly in place. Then add some of the curry powder and mix and then add in the almonds and mix again. Spread the almonds over the prepared baking tray and bake. Then they’re ready to eat as a great snack or give as a gift.
